Between 2013 & 2015 I was rushed to the emergency room twice. I was so bloated and in so much pain I thought that my appendix might've burst. The doctors asked if I was pregnant, but neither was the case...after hours and hours of testing, turned out I was FULL of crap...literally crap. After my second emergency room visit in 2015 during my honeymoon in Portugal, I finally committed to being 100% gluten free. It was a sad parting with gluten, but the pain and emergency room visits weren't worth the buttery breads or cream filled pastries anymore...
So I took it really seriously, stuck to GF everything and ended up on a mostly raw/ vegetarian diet from 2015 to 2018. Even though the extreme bloating and constiaption was gone I still for some reason had a bit of a lower belly extension, along with occasional stomach pain after eating, and not to mention the usual stiffness and weekly migraines I was living with since I was 16 years old. I got by practicing yoga and eating what seemed like a pretty darn healthy diet.
Then in May of 2018 by Divine fate I literally stumbled upon a 5,000 year old time tested healing system called, Ayurveda. I was IMMEDIATELY hooked! The next day I learned to make a dish called Kitchardi, and I started off on a 36 day kitchardi cleanse. Kitchardi is Ayurveda's most fundamental dish. It’s consumed for preventing health issues, cleansing and because it's so darn delicious.
I ate kitchardi for breakfast, lunch and dinner. I quit drinking coffee, alcohol, kombucha and I stopped eating sugar, fried foods, raw foods, cold foods, garlic, onion and more! If it wasn't kitchardi, I wasn't eating it- CHANGED MY LIFE! Within 2 weeks of my cleanse I started experiencing many miraculous things: the migraines I had experienced since I was 16 years old disappeared! I literally forgot I was having migraines! My extended lower belly was gone!! What? That's right, what a relief, but that's not even the best part. Something that I still experience more and more to this day is the kitchardi's rejuvenation effects. The inflammation in my body has DRASTICALLY decreased. The stiffness went from a level 9 to a level 3. When I went to the podiatrist at 25 years old she was shocked and almost…elated to see how stiff I was. I remember her saying she wished there was an intern there to see me, because the stiffness I was experiencing for all those years was something the podiatrist usually sees people start to develop in their 40’s or 50’s. LOL! I can't help but laugh at where I was JUST 5 years ago and where I am now. WOW. It still blows my mind to now wake up in the morning without stiffness throughout my spine and in my feet! AND I can ACTUALLY make progress in my yoga practice now. YAAAY!
Oh, and. guess what!? I can eat gluten again! Why? Because I healed my gut, and still am healing my gut! When it is difficult to digest gluten, dairy, beans and/or grains that indicates the digestive fire, known as "agni" in Ayurveda, is low and the fire needs rekindling. Well, that's EXACTLY what kitchardi and proper Ayurvedic food does! It stokes the "agni" so the body can incinerate food, use it as energy, eliminate it and prepare for more food. Ayurvedic studies found that 98% of disease is started in the gut. Why? Because when the "agni" is low due to improper food combining, eating lots of raw food or drinking lots of iced beverages that can put the "agni" out leading to malabsorption, constipation, and indigestion which may lead to toxemia and many other health issues.
